The Laboratory of Food Systems Biotechnology (FSB) is seeking a Scientific Assistant to support microbiological and molecular biology research on the topic of food fermentation and gut health.
Project background
Fermented foods and beverages are a nutritionally and culturally significant component of human diets globally, as well as a primary source of microorganisms and microbial metabolites that shape both food quality and human health. This includes improvements of food nutrition and safety, via production of microbial metabolites, altering food chemical composition, affecting nutrient absorption or fibre fermentability, and reducing anti-nutrient and toxin levels. However, we have limited knowledge of the biodiversity and functional roles of microorganisms in traditional food fermentations. Given the role of fermented foods in the human diet, it is imperative that we (1) preserve existing biodiversity of fermented foods and characterize their functional roles for improvement of existing and novel foods (e.g., sustainable plant-based foods); and (2) develop technologies for rapid characterization of microbial and chemical profiles of these foods.
Job description
You will be responsible for research support tasks in the Food Systems Biotechnology group, providing support on research topics related to food fermentation and gut health. In the near-term, this includes support in citizen science projects studying fermented food microbiology across Europe as part of a large European consortium project, HealthFerm .
Primary responsibilities include:
- Support of other researchers in diverse project areas
- Microbial cultivation (aerobic and anaerobic), screening, and identification
- Molecular biology (DNA extraction, PCR, QPCR, DNA sequencing)
- Analytical liquid chromatography
Secondary responsibilities include:
- Anaerobic chamber handling
- Research data and metadata curation
- Sample and material collection and shipping
- Procurement and inventory management
- Hazardous waste management
- Support with laboratory practical courses
- Fermentation / Bioreactor handling
Your profile
You are a magician in the laboratory who can make even the most fastidious microorganisms do your bidding. You are a DNA whisperer. You are a skilled, collaborative, and detail-oriented microbiologist or molecular biologist with a passion for research and laboratory efficiency. You can work independently, but are also a team player who likes to collaborate in diverse teams. You like new challenges and learning new techniques, and are not daunted by the emerging challenges in a dynamic research environment.
Key qualifications:
- MSc (or BSc + 2 or more years of experience) or higher in microbiology, biology, food science, or a related field
- Good practical experience in standard microbiology techniques
- Good practical experience in standard molecular biology techniques
- Excellent interpersonal communication, teamwork, and organizational skills
- Excellent communication skills in English are needed for working in a collaborative international research setting
- Demonstrated experience in collaborative research
Desired qualifications:
- Experience with anaerobic microbial cultivation techniques
- Experience with analytical chemistry techniques, including liquid chromatography, gas chromatography, and/or mass spectrometry
- Experience with laboratory information management platforms or interest to learn
- Experience with laboratory automation systems or interest to learn
- Experience in brewing and/or food fermentation and technology
- German language skills
