 | The School of Environmental and Biological Sciences, located on the George H. Cook Campus, is one of the largest schools of Rutgers University in New Brunswick, New Jersey. We pursue excellence in research, teaching, and outreach in areas of study that address the biological spectrum from molecules to ecosystems. Our emphasis is on both the fundamental sciences and the social and human dimensions. Posting Summary
Rutgers, The State University of New Jersey, is seeking a Laboratory Operations Coordinator for the  Department of  Nutritional Sciences. The position is  responsible for the conduct and management of food preparation and production laboratory activities following the instruction given by the supervisor and Nutritional Sciences faculty teaching related courses.
Among the key duties of this position are the following:
  • Works to establish and ensure consistent, timely implementation of standard operating procedures for procurement, storage, and control of foods lab supplies used in food preparation and production teaching laboratories.
  • Oversees the work of graduate Teaching Assistants in preparing for, executing, and completing food labs, including ordering of supplies, daily lab set up, and close out of lab to maintain safety and sanitation protocols and adherence to the Didactic Program in Dietetics ACEND Accreditation Standards.
  • Assists in training and management of graduate Teaching Assistants assigned to the food production and preparation teaching laboratories to ensure consistent execution of lab activities and instruction.
  • Assists the supervisor and faculty teaching the food preparation and production laboratories to control lab costs and maintains purchasing records.
  • ·Ensures laboratory facilities and equipment fully comply with food safety, sanitation, and fire regulations at all times.
  • Assists in training students enrolled in food preparation and production teaching laboratory courses to implement safe laboratory procedures and maintain lab safety at all times and orient them to lab layout, equipment, and standard operating procedures.
  • Conducts routine food preparation and production demonstrations to ensure quality control in all labs by students and Teaching Assistants.

Minimum Education and Experience
  • Bachelor’s degree in food, nutrition, hospitality, or other closely related area. 

Certifications/Licenses
  • Current ServSafe certification
Required Knowledge, Skills, and Abilities
  • Knowledge of food safety and sanitation, food preparation and storage skills, meal planning, culinary math, recipe development, ingredient substitutions, food labeling regulations, food allergies, therapeutic diets, and first aid. 
  • Excellent communication skills. 
  • Use of personal vehicle in order to travel for business demands; a valid driver’s license would be required for this position.
Preferred Qualifications
  • One year of food preparation and production experience in a high volume institutional setting. 
  • Experience teaching, registered dietitian credential, and experience in food writing and photography preferred.

Equipment Utilized
  • Skill in home & commercial food preparation and production equipment.
Physical Demands and Work Environment
  • Physical demands include mobility and dexterity required to execute food preparation and production laboratories, ability to drive a car, ability to move food laboratory supplies.
