Abstract
The doctoral thesis will be focused on the current issue of the use of biologically valuable substances with the potential for positive effects on the body. Modern foods suitable for targeted groups of consumers include protective components, the application of which, from a technological point of view, brings problems that need to be identified and addressed. The scientific objective of the doctoral thesis will be to analyze the behavior of process intermediates influenced by the addition of extracts from plant sources, and to search for and find value-added food production processes, i.e., foods that have a significant content of nutritionally valuable substances with a defined effect on the body and at the same time the required technological properties. The main food interest group will be cereal-based products, which are the most important raw materials of plant origin in our country and significantly affect the health status of consumers and the entire population. Emphasis in research activities will also be placed on the preservation of the properties of applied nutritionally important substances during the technology of processing and adjustment to the consumable state. It is this issue that requires an experimental approach and the use of new progressive technologies. The expected benefit of the work will be the development of framework technological procedures to produce food with added value and with the required nutritional, technological and sensory properties.
Využitie fytonutrientov z rastlinných zdrojov pri výrobe potravín s pridanou hodnotu
Abstrakt
Doktorandská dizertačná práca bude orientovaná na aktuálnu problematiku využitia biologicky cenných látok s potenciálom pozitívnych účinkov na organizmus. Súčasťou moderných potravín vhodných pre cielené skupiny konzumentov sú protektívne komponenty, ktorých aplikácia z technologického hľadiska prináša problémy nevyhnutné identifikovať a riešiť.
Vedeckým cieľom doktorandskej práce bude analyzovať správanie sa procesných medziproduktov ovplyvnené prídavkami extraktov z rastlinných zdrojov, a hľadať a nachádzať postupy výroby potravín s pridanou hodnotou, teda potravín, ktoré majú významný obsah nutrične cenných látok s definovaným vplyvom na organizmus a zároveň požadované technologické vlastnosti. Hlavnou záujmovou potravinovou skupinou budú výrobky na báze cereálií, ktoré sú u nás najdôležitejšími surovinami rastlinného pôvodu a vo významnej miere ovplyvňujú zdravotný stav konzumentov a celej populácie. Dôraz vo výskumných činnostiach bude kladený aj na zachovanie vlastností aplikovaných nutrične významných látok počas technológie spracovania a úpravy do konzumného stavu. Práve táto problematika si vyžaduje experimentálny prístup a využívanie nových progresívnych technológií.
Očakávaným prínosom práce bude vypracovanie rámcových technologických postupov pre výrobu potravín s pridanou hodnotou a s požadovanými nutričnými, technologickými aj senzorickými vlastnosťami.
