Sustainable Food Choice

Changes in consumer behavior of individuals and households are an important part of efforts to reduce greenhouse gas emissions or to support sustainable use of available natural resources and energies. Consumers' food purchasing decisions determine what foods are produced and by what methods. Replacing animal food with plant food, preferring organic food, novel food, or using new genomic techniques in food production can significantly reduce environmental impacts, including the potential for global warming, water and land use. The "Farm to Fork" strategy aims to achieve a sustainable EU food system. In addition to positive health impacts, reduced emissions and sustainable food production and processing, the strategy aims to actively engage the consumer and change diets towards more sustainable food. Successful food marketing requires a deep understanding of the perception of food products and the consumer characteristics that determine their rejection or acceptance. The aim of the thesis will be to reveal the factors that influence the perception of food by consumers and to verify possible interventions that will nudge consumers to more sustainable consumption of food, using selected methods of multivariate statistical analysis (conjoint analysis, structural equation models). The topic of the thesis is related to the project APVV22-0442. Topic for applicants for full time and part time study. Dissertation will be processed in Slovak language or in English language.

Zmeny spotrebiteľského správania jednotlivcov a domácností sú dôležitou súčasťou úsilia znížiť emisie skleníkových plynov alebo udržateľnejšieho využívania dostupných prírodných zdrojov a energií. Rozhodnutia spotrebiteľov o nákupe potravín určujú, aké potraviny sa budú vyrábať a akými metódami. Nahradenie potravín živočíšneho pôvodu rastlinnými potravinami, preferencia organických potravín, nových potravín, alebo využitie nových genomických techník v produkcii potravín môžu výrazne znížiť environmentálne vplyvy, vrátane potenciálu globálneho otepľovania, využívania vody a pôdy. Stratégia „Z farmy na stôl“ si kladie za cieľ dosiahnutie udržateľného potravinového systému EÚ. Okrem pozitívnych zdravotných dopadov, znížených emisií a udržateľnej výroby a spracovania potravín je cieľom stratégie aktívne zapájať spotrebiteľa a zmena stravovania smerom k udržateľnejším potravinám. Úspešné uvedenie potravín na trh si vyžaduje hlboké pochopenie vnímania potravinových produktov a spotrebiteľských vlastností, ktoré určujú ich odmietnutie alebo prijatie. Cieľom dizertačnej práce bude odhalenie faktorov, ktoré ovplyvňujú vnímanie potravín spotrebiteľmi a overenie možných intervencií, ktoré budú motivovať spotrebiteľov k udržateľnejšej spotrebe potravín, s využitím vybraných metód viacrozmernej štatistickej analýzy (conjoint analýzy, štrukturálnych rovnicových modelov). Téma práce súvisí a riešeným projektom APVV-22-0442. Téma pre uchádzačov o dennú a externú formu štúdia. Dizertačná práca sa bude spracovávať v slovenskom jazyku alebo v anglickom jazyku.
