Investigating the factors influencing the identification of sustainable foods

Given the sustainability context of current food consumption, it is essential to have a good understanding of the sustainability motives that consumers have when choosing food. A comprehensive and validated scale to measure sustainability motives across the full spectrum of food choice motives could contribute to this understanding, especially since sustainability is a multifaceted concept in which different aspects can sometimes be contradictory. Data on individual foods are needed to identify food combinations that could combine all dimensions of sustainability. Analyzing the relationships between different dimensions of sustainability at the food level would make it possible to determine the compatibility or incompatibility of these dimensions and to identify the "most sustainable" foods. The aim of the work is to identify foods that have a low environmental impact, high nutritional quality and affordable price by combining the three dimensions into one sustainability score. Given the above findings, there is a need for a scale that is able to capture the entire concept of sustainable food across a wide range of food choice motives. Such a scale, which would clarify the positions of consumers' sustainability motives when choosing food, will be provided by . the Food Choice Questionnaire (FCQ), developed by Steptoe, Pollard and Wardle (1995), can be considered a separate method for measuring food choice motives. The FCQ consists of 36 items that measure the importance of nine different motives for food choice: health, mood, convenience, sensory appeal, natural content, price, weight control, knowledge, and ethical concerns. When evaluating the results of the dissertation, selected mathematical and statistical methods will be used, depending on the database base. Based on the results of the work, conclusions and recommendations for practice will be formulated. The dissertation will be part of the Horizon 2020 project COMFOCUS - 101005259 "Community of Consumer Food Science", OP Integrated Infrastructure: DemandOriented Research for Sustainable and Innovative Food, Drive4SIFood 313011V3 Topic for applicants for full time and part time study. Dissertation will be processed in Slovak language or in English language.
Skúmanie faktorov vplývajúcich na identifikáciu udržateľných potravín

Vzhľadom ku kontextu udržateľnosti súčasnej spotreby potravín, je nevyhnutné dobre porozumieť motívom udržateľnosti, ktoré majú spotrebitelia pri výbere potravín. K tomuto pochopeniu by mohla prispieť komplexná a overená škála na meranie motívov udržateľnosti v rámci celej škály motívov výberu potravín, najmä preto, že udržateľnosť je mnohostranný koncept, v ktorom môžu byť rôzne aspekty niekedy protichodné. Na identifikáciu kombinácií potravín, ktoré by mohli kombinovať všetky dimenzie udržateľnosti, sú potrebné údaje o jednotlivých potravinách. Analýza vzťahov medzi rôznymi dimenziami udržateľnosti na úrovni potravín by umožnila určiť kompatibilitu alebo nezlučiteľnosť týchto dimenzií a identifikovať „najudržateľnejšie“ potraviny. Cieľom práce je identifikovať potraviny, ktoré majú nízky vplyv na životné prostredie, vysokú nutričnú kvalitu a dostupnú cenu spojením troch rozmerov do jedného skóre udržateľnosti. Vzhľadom na vyššie uvedené zistenia existuje potreba stupnice, ktorá je schopná zachytiť celý koncept udržateľných potravín v rámci širokého spektra motívov výberu potravín. Takúto škálu, ktorá by objasnila pozície motívov udržateľnosti spotrebiteľov pri výbere potravín, poskytne . dotazník výberu jedla (Food Choice Questionnaire, FCQ), ktorý vyvinuli Steptoe, Pollard a Wardle (1995), a možno považovať za samostatnú metódu na meranie motívov výberu potravín. FCQ pozostáva z 36 položiek, ktoré merajú dôležitosť deviatich rôznych motívov výberu potravín: zdravie, nálada, pohodlie, zmyslová príťažlivosť, prirodzený obsah, cena, kontrola hmotnosti, znalosť a etické obavy. Pri vyhodnocovaní výsledkov dizertačnej práce budú využité vybrané matematickoštatistické metódy v závislosti od databázovej základne. Na základe výsledkov práce budú formulované závery a odporúčania pre prax. Dizertačná práca bude súčasťou projektu Horizont 2020 COMFOCUS - 101005259“ Komunita spotrebiteľskej vedy o potravinách“, OP Integrovaná infraštruktúra: Dopytovo-orientovaný výskum pre udržateľné a inovatívne potraviny, Drive4SIFood 313011V3 Téma pre uchádzačov o dennú a externú formu štúdia. Dizertačná práca sa bude spracovávať v slovenskom jazyku alebo v anglickom jazyku.
