Summary of Duties:

Under the general direction of the unit Executive Chef, assists in managing the concept development, creation, testing, and implementation of culinary programs within the dining facility. Responsible for the culinary supervision of cook leads, food service worker leads, student and temporary employees.

Responsible for maintaining culinary standards, quality control, sanitation and training for the Southside Café. Provides sound fiscal management, which includes advising and assisting with the yearly operational budget and controlling food and labor costs. The Sous Chef supports the organizational mission, providing support to the dining facility in the following areas: food and ingredient specifications, training programs, retail services, catering and residential dining. Assists with the long and short term planning of Dining Services. Enforces objectives, policies, standards, and procedures of Dining Services. Contributes to a positive and harmonious work environment. Assist in all operations in the absence of the Executive Chef/Manager

Required Qualifications:

  • A Bachelor’s degree in hotel and restaurant administration, institutional management, business administration or closely related field and two (2) years of supervisory/management experience which included planning and budgeting. Additional qualifying food service work experience and/or vocational training in quantity food preparation may be substituted, year-for-year, for college education.

  • An Associate’s degree in culinary arts and 4 years of experience which includes 2 years of supervisor/management experience, may be substituted for the Bachelor’s degree requirement.

  • Experience assisting with the development of culinary programs that reflect culinary depth and breadth in concept development, facility development, and equipment specification.

  • Experience with food and labor cost controls and plating and presentation.

  • Experience with recipe or daily special development including culinary knowledge and experience to sufficiently write instructional sequences and scale ingredients within a recipe in accordance to recipe quantity.

  • Experience in planning and directing food preparation in a professional kitchen (university setting highly desirable).

  • Ability to assist the Executive Chef with development of work flow in a professional kitchen to ensure the highest quality of sanitation, safety, and satisfaction is met.

  • Strong computer knowledge.

  • Demonstrated work experience of successful supervision and training of a diverse work staff.

  • Strong written communication skills.

  • Must be ServSafe certified.

  • Possession of, or ability to obtain, a Washington State Food Handler’s Permit within 14 days of employment.

  • Must have, or be able to obtain by time of hire, a valid driver's license.

  • Must be able to work a flexible schedule; weekends will be required as business dictates.

Preferred Qualifications:

  • An Executive Sous Chef certification from an accredited culinary institution.

  • Experience assisting the Executive Chef with a menu management software system that provides: ordering, receiving, production, and service of menu items within the menu cycle and concept platforms; forecasting and post-data collection of menu items within the menu cycle; and re-forecasting/updating of the menu cycle in accordance with weather, projected customer attendances, product availability, consumer trends, calendar/holiday events.

  • Experience in a management position with direct responsibility for development of culinary programs and food cost

  • Experience with sustainable food procurement and production.

  • Experience managing bargaining unit covered employees.

  • Proven capability of assuming all responsibilities in the Executive Chef’s absence
