Job Summary

The purpose of the UC Laboratory for Research in Food Preservation is to provide guidance to the State of California to ensure the microbiological safety of foods produced and processed in accordance with the State’s botulism control program.

Under minimal supervision, conduct analytical procedures to evaluate acidified and low-acid foods to assure compliance with the State of California’s Cannery Inspection program. Communicate with State inspectors and firms submitting requests, as required. Evaluate new products to determine if they qualify for the Cannery Inspection program. Conduct laboratory work, including measuring pH, water activity, salt concentration, and testing processed foods for commercial sterility. Maintain equipment and logbooks and calibration records. Clerical and computer duties, as necessary.

PHYSICAL DEMANDS

  • Ability to lift boxes up to 25-30 lbs.
  • Stand for extended periods of time to conduct tests.

WORK ENVIRONMENT

  • This position will work at an off-site location in San Ramon, CA. Not on the UC Davis Campus.

QUALIFICATIONS

 

Required:

 

Minimum Education/Experience

  • BS in Food Science or Microbiology

 

  • Experience using laboratory equipment including microscope, pH meter, water activity meter

 

  • Experience with aseptic technique.

Minimum Knowledge, Skills, and Abilities (KSA)

  • Knowledge of Microsoft Word, Excel and Access

 

  • Skills to organize work and set priorities.

 

  • Skills to organize and maintain records.

  • Knowledge of regulations for Acidified and Low-Acid Foods

 

  • Familiarity with the California Cannery Regulations
