Description of Work
The Meat Science group at the University of Nebraska-Lincoln conducts research ranging from animal growth and development through fresh meats and processed/manufactured meat products. Our state-of-the-art facilities are among the best in the country and they contribute to the research, teaching, and extension/outreach activities of the six meat science faculty members and the Department of Animal Science.
As the Research Lab Manager, you will:
  • Manage and oversee two analytical meat science laboratories and a sensory kitchen/laboratory.
  • Manage the day-to-day functions of the research labs including the training, mentoring, and oversight of students and other research staff; scheduling research projects and teaching activities; maintaining and preparing equipment, space, and inventory; train and implement safety procedures including creating new procedures as needed.
  • Advise and provide guidance as faculty, students, and staff are using the labs on experimental design, implementation, and troubleshooting.
  • Work with animal tissues and meat (beef, pork, etc.) on a daily basis.

Minimum Required Qualifications
  • Bachelor’s degree in animal science, meat science, food science, or other related discipline plus four years of laboratory experience. Additional relevant education may substitute for years of experience on a year-for-year basis.
  • Experience with data collection and quantitative analysis.
  • Experience leading a team.
  • Knowledge of laboratory safety standards and ability to enforce those standards within work group.
  • Ability to work with animal tissues and meat (beef, pork, etc.), lift 30 pounds, stand for extended periods of time, work in cold, refrigerated environment, and to occasionally work irregular hours and travel.
