About the Department
The NC Food Innovation Lab (FIL) is created to aid companies, entrepreneurs and University faculty with research, design and new product development in collaboration with North Carolina stakeholders to advance the food manufacturing sector in the state. 
Essential Job Duties
North Carolina State University is seeking a senior-level food scientist to coordinate research, design and new product development in collaboration with entrepreneurial companies in the new North Carolina Food Innovation Lab on the North Carolina Research Campus in Kannapolis.  This position will work alongside the Director to recruit companies to use the facility, and will lead efforts in new product ideation, prototype development, and recommending unit operations for scale-up. 
All product specifications must meet or exceed all product requirements, regulatory standards, including but not limited to Food and Drug Administration (FDA), Global Food Safety Initiatives (GFSI), US Department of Agriculture, or other quality and food safety requirements.  This position will operate under minimal supervision from management and have discretion to adjust formulas, product evaluations, or other variables during the development phase.
This position is located in Kannapolis, NC.

Minimum Education and Experience
  • Master’s degree in Food Science, Nutrition, or related field preferred OR Bachelor’s degree in the same fields and a minimum of 3 years’ experience in product research and development.
Other Required Qualifications
  • Knowledge of chemical composition, structure and properties of substances, chemical processes, production techniques, produce specifications, food safety, and safe food storage and handling techniques.
  • Three years of project management experience.  
  • Demonstrated ability to move products from ideation to commercialization.
  • In depth knowledge of requirements for nutritional data and regulatory requirements from FDA and USDA as well as state and local health and food safety code.  
  • Previous experience with HACCP and cGMP requirements.
Preferred Qualifications
  • Pilot plant working experience (3 years)
  • R&D experience (5 years)
  • Evidence of highly developed research skills and ability to find, analyze, interpret, and critique data quickly and accurately.  Evidence of strong analytical and organization skills with the ability to multi-task and prioritize concurrent projects.
  • Strong problem-solving skills with the ability to apply clear logic to troubleshoot and resolve conflicts and unexpected outcomes.
  • Evidence of effective communication skills, including the ability to present technical information to a variety of audiences.  Demonstrated interpersonal and relationship-building skills with both internal and external contacts.
  • Certified Better Process Control School and/or Acidified Foods Manufacturing School
