Memorial Union Food Service Assistant Director

Job Summary:

This position is responsible for the administration of the Memorial Union Retail Operations which include Peet's Coffee, Daily Scoop Ice cream, Badger Market C store, Rathskeller (Rathskeller, Brat Stand, Stiftskeller), and Lakefront (Carte, Strada, Lakeview Lounge, BBQ Stand). Additional duties include developing creative and entrepreneurial plans to ensure high quality food service and excellent customer service.
The operations include permanent staff (23) during the academic year and (31) during summer months and part time staff (350) with a combined gross revenue budgeted more than $12 million.
Work Schedule:
The work week will regularly be 45-50 hours, with some weeks exceeding this based on business levels. The retail operations run from 7am until 11pm. Flexibility based on business is needed from a successful candidate.
Work week will be minimum 45-50 hours, holidays, weekends and nights as necessary to obtain coverage for effective operations of business.


Responsibilities:
Provides direction for food service operations by planning and organizing daily operations, department finances, sourcing, quality control, staff, and menu development to ensure customer satisfaction.
  • 20% Assists in the development and implementation of unit focused strategic planning initiatives and programs to ensure appropriate use of resources and exceptional customer satisfaction
  • 20% Assists in the development of unit focused operating policies and procedures to ensure adherence to production, safe food quality, handling, and sanitation processes and procedures
  • 20% Directs the development of food menus, inventory purchases, and forecasting
  • 10% Monitors contracts and liaises with vendors regarding product purchases and contract compliance
  • 10% Exercises supervisory authority, including hiring, transferring, suspending, promoting, managing conduct and performance, discharging, assigning, rewarding, disciplining, and/or approving hours worked of at least 2.0 full-time equivalent (FTE) employees
  • 20% Monitors and maintains technology systems to support the needs of various working units

Education:

Culinary Degree or other formal training complementing your base knowledge.


Qualifications:

Required:
-Five years minimum overseeing a high-volume retail operation
-Supervision and oversight of operations, including training, coaching, and staff development
-Two or more years of experience working in an operation serving alcohol


License/Certification:

Required
ServSafe Certification
Hold or able to obtain within 6 months
Required
Valid Bartender License
Hold or able to obtain within 6 months
Preferred
Drivers License - Valid and Meets UW Risk Management Standards

Additional Information:

The Wisconsin Union operates from several buildings on the UW-Madison campus including Memorial Union, Union South, Fluno Center, Pyle Center, University Club, Red Gym, and the Student Activity Center. The Wisconsin Union is a financially self-supporting division of the University of Wisconsin-Madison. Financial support for the organization is provided by income earned by over thirty food service units and a variety of nonfood units such as games, guest rooms, space rentals and campus vending. Substantial support is also provided by student fees. The total annual organizational budget is approximately $60 million dollars.
