Position Overview
Build partnerships and initiate collaborative programs with schools, food pantries, grocery retailers and/or community interests that represent social and environmental support systems for low income families and individuals. Educational programs developed and delivered will promote healthier food and physical activity choices for food stamp, also known as supplemental nutrition assistance program (SNAP) recipients. This position will be based out of Pocatello, Idaho.
Unit Overview
Eat Smart Idaho provides nutrition and physical activity education for low-income Idahoans. Classes are taught at emergency food sites, community centers, adult rehabilitation centers, public housing sites, Head Start centers and schools with high numbers of free and reduced lunch participants.
Brought to you by University of Idaho Extension in the College of Agricultural and Life Sciences, Eat Smart Idaho helps adults and families learn the basics of:
• healthy eating
• smart shopping
• food safety
• quick meal preparation
• management of limited grocery dollars
• increased levels of physical activity
Eat Smart Idaho is supported by two USDA grants: Supplemental Nutrition Assistance Program Education (SNAP-Ed), in partnership with the Idaho Department of Health & Welfare and the United States Department of Agriculture Food and Nutrition Service, and EFNEP (Expanded Food and Nutrition Education Program), in partnership with the USDA National Institute for Food and Agriculture.

Position Responsibilities


Key Accountability Provide education and environmental support in nutrition, food safety and food resource management by:
Job Duties
  • Initiating relationships with organizations, agencies and individuals that make up the social environmental networks that influence decisions made by SNAP recipients.
  • Cultivating partnerships with those organizations and individuals to test and adopt new practices intended to promote healthier choices. Practices may include changing the layout/organization of a store/food pantry, to facilitate healthy choices; organizing a healthy food drive project to improve the quality of donations at school or organization food drives; gathering local information about food insecurity, food deserts, access to physical activity opportunities for use by local anti-hunger or healthy living coalitions; presenting healthy cooking demonstrations and nutrition education in locations where SNAP recipients make food choices; and collaborating on and updating social media information.
  • Documenting activities for environmental interventions and submit required reporting documents.
  • Maintaining records and paperwork for collaborative meetings with partners and agencies; collecting and documenting research, data, and information; keeping accurate daily logs and mileage; maintaining communication with supervisor, other program advisors and county staff.

Program Delivery
  • Teaching approved curricula on basic nutrition, food safety, food resource management, and physical activity to limited resource adult and youth participants in group settings both in person and online (may include conducting occasional classes with place-bound clients in their home).
  • Demonstrating food and recipe preparation techniques to participants.
  • Maintaining and purchasing supplies for implementing education.
  • Working with a supervisor and agencies to identify low-income clientele who would benefit from the program.
  • Maintaining respectful and cooperative working relationships with agencies and organizations.
  • Arranging for and scheduling locations and dates to provide educational classes.
  • Actively recruiting eligible adults and youth to participate in scheduled classes.

Program Evaluation and Impacts
  • Completing and submitting essential paperwork in a timely manner.
  • Maintaining accurate and confidential records.
  • Informing supervisor about program progress and impacts.
Key Accountability Contribute to team effort by:

  • Maintaining and ordering supplies for Eat Smart Idaho program.
  • Assisting coworkers to ensure quality and timely customer service.
  • Updating or learning new technology and/or skills.
  • Performing additional related duties as requested.

Position Qualifications


Required Experience
  • Experience teaching or speaking publicly in a professional environment.
  • Experience using computers, software and the internet.
  • Experience cooking or preparing food, food safety and maintaining equipment/supplies.

Required Education
  • High School diploma or equivalent.

Required Licensures, Certifications or other
  • Position requires the ability to travel throughout Eastern Idaho counties to multiple worksites and occasionally for trainings or meetings in other Idaho locations. The University of Idaho does not provide transportation for this travel, employees must provide their own. Mileage will be reimbursed. This position requires the ability to work occasional weekends and after regular business hours.
Additional Preferred
  • Experience developing marketing tools and messaging, managing projects and creating presentations and charts using computer programs.
  • Experience in nutrition and food resource management.
  • Bachelor’s degree or equivalent experience in Health, Health Care Studies, Social Services, Education or a related field.
  • Experience with data collection and research.
Physical Requirements
  • Must be able to teach or otherwise provide instruction of physical activities including, but not limited to, marching, toe touches, squats, and arm reaches/lifts.
  • Must be able to lift, carry, and/or otherwise move instructional materials weighing up to 40 lbs. from vehicle to work site and from work site to vehicle.
