Job Description
This position is responsible for the preparation of cooked foods in support of the Fawcett Center Food Service operation that serves guests of the Cafe and the Conference Center; operates as part of the culinary team and cooks meats, poultry and seafood as well as breakfast items, pastries, and other baked goods and presents the finished products garnished and ready for service; assists with banquet and catering cooking; prepares restaurant menu items; interacts and improvises dishes directly with customers often in theatrical style; prepares and cleans work area using proper sanitizing techniques; makes menu suggestions; interprets recipes, weighs and measures ingredients, and operates standard kitchen equipment; ensures that all food prepared meets standards of excellence. Supervisory responsibilities to include training students and full time line cooks; monitoring and enforcement of proper kitchen protocols; ensuring culinary standards set forth are met and exceeded. Daily opening responsibilities to include unlocking kitchen doors, coolers and storage rooms and turning on equipment; self-management in executing preparation and presentation of cold foods, baked goods and hot food production. Successful completion of culinary institute training administered by department is required during probationary period.


Minimum Education Required
Bachelor's degree or equivalent experience. 2 years of relevant experience required. 2-4 years of relevant experience preferred.


Required Qualifications
Required: knowledge of various methods of food preparation including sauteing, display cooking, deep frying, grilling and steaming; ability to weigh and measure ingredients, ability to properly use knives and standard kitchen equipment; knowledge of garnish theory and ability to create garnishes with a wide variety of ingredients; knowledge and skill in presenting desserts and a salad bar; ability and skill to cook meats, poultry and seafood utilizing proper methods and understanding proper timing to assure freshly cooked products are ready for continuous service.
