Job Purpose

To assist the chef manager in leading the team of chefs who will be responsible for producing and serving the UoG Commercial Ltd food and beverage offer to the agreed standard. To share knowledge and expertise enabling the delivery of a market leading service experience whilst achieving food cost, wastage and customer service targets. To assure the end to end ordering process and to support the Section Managers in ensuring that relevant food safety compliance and administrative requirements are met.

As a full time role this post has a working pattern of 37.5 hours working 5 days over 7.

Main Duties and Responsibilities

  • To help lead and develop the chef team through active use of performance management, training and development tools to deliver the catering operating plan and meet legislative and policy requirements.
  • Responsible for the preparation and monitoring of food production in accordance with menu specifications and food safety guidelines.
  • Responsible for food cost control, stock levels and meeting budgeted gross margin performance.
  • Confidently and competently uses the equipment, tools, technology, systems and processes to drive sales and deliver great service to customers
  • Demonstrate good practice and coach other chefs in the execution of the catering offer to the agreed presentation standards.
  • Help lead the team of chefs to be competent and compliant with the processes and operating procedures required in their function.
  • Help lead a team that champions continuous improvement to drive efficiency and productivity.
  • Ensure food safety compliance is of high priority.
  • Demonstrate current market and legislative awareness of the catering industry whilst having a passion for cooking.
  • Knowledge, Qualifications, Skills and Experience

    Knowledge/ Qualifications

    Essential:

    A1 Food Safety Level 3.

    A2 Allergen Awareness.

    A3 706/1/2 or equivalent.

    Skills

    Essential:

    C1 Excellent craft skills and product Knowledge.

    C2 Health and safety awareness in a similar environment is essential.

    C3 Excellent time management skills.

    C4 Ability to demonstrate strong people management and leadership skills.

    C5 Strong organisational and planning skills.

    C6 Highly flexible and adaptable with the ability to plan and prioritise your own and others work.

    Experience

    Essential:

    E1 An ability to demonstrate the competencies to undertake the duties associated with this level of post having acquired the necessary knowledge and skills in a similar role elsewhere.

    E2 Sous chef experience in a food production or food service environment.

    Terms and Conditions

    Salary from £13.00 - £16.50 per hour (based on skills and experience).

    This post is full time (37.5 hours per week) and open ended.

    As a full-time role this post has a working pattern of 37.5 hours, flexibility will be required by mutual agreement and there will be some weekend and public holiday working at peak periods.

    UoG Commercial Ltd

    UoG Commercial Ltd is a subsidiary company wholly owned by the University of Glasgow and provides catering services as part of the new extended campus at the University.

    The University has been in existence since 1451 and has been on the Gilmorehill Campus in the west end of Glasgow since the 1870s. Construction started on the first new building as part of the campus development - the James McCune Smith Learning Hub – in 2017 and UoG Commercial Ltd will operate 3 catering units when the hub opens in 2020.
