Job Description
The successful candidate will work with Prof HUANG DEJIAN on a 3D seafood printing under a project on Urban Microalgae-Based Protein Production
The main responsibilities of the position include:
- Designing of food ink by Identification of best raw material combinations, “food ink” containing microalgae proteins, that enable shape fidelity and material printability assessed by rheological measurements,
- Development of optimal printing processes for fabrication of seafood mimics
- Study the effects of post-printing cooking/processing methods that lead to products with desired organoleptic properties
Qualifications / Discipline:
- PhD in Food Science and Technology and related field.
Skills:
- Protein isolation and characterization skills
- Skills in formulation of protein-based hydrocolloids and the characterization of the physicochemical behaviours
- Confocal imaging
- Rheometers, texture analyser, viscometers,
- Sensory evaluation skills
Experience:
- Experience in meat mimics research is a plus but not essential
- Experience in 3D food printing is a plus nut not essential
