Job Description

The successful candidate will work with Prof HUANG DEJIAN on a 3D seafood printing under a project on Urban Microalgae-Based Protein Production

The main responsibilities of the position include:

  • Designing of food ink by Identification of best raw material combinations, “food ink” containing microalgae proteins, that enable shape fidelity and material printability assessed by rheological measurements, 
  • Development of optimal printing processes for fabrication of seafood mimics 
  • Study the effects of post-printing cooking/processing methods that lead to products with desired organoleptic properties

Qualifications / Discipline:

  • PhD in Food Science and Technology and related field. 

Skills:

  • Protein isolation and characterization skills
  • Skills in formulation of protein-based hydrocolloids and the characterization of the physicochemical behaviours
  • Confocal imaging
  • Rheometers, texture analyser, viscometers, 
  • Sensory evaluation skills

Experience:  

  • Experience in meat mimics research is a plus but not essential
  • Experience in 3D food printing is a plus nut not essential
