Overview

The Food Processing and Nutrition RG is dedicated to developing nanotechnology-based solutions for big societal challenges to build the future food system, optimising materials and processes throughout the entire food value chain to ensure the integrity of food to consumers.

We are looking for a qualified Research Fellow to join our inter/multidisciplinary team in analysing 3D scaffolds and cell-based ingredients, performing in vitro digestions and evaluating bioactivities related to non-communicable diseases and their adequacy to vulnerable population groups (child, pregnant and elderly). The work will be performed under the project FEASTS – Fostering European cellular Agriculture for Sustainable Transition Solutions, with the EU Grant agreement ID: 101136749.

 

Job Duties

The job duties will be the following:

  • Manufacture and characterise cell-based edible scaffolds;
  • Assess samples’ physicochemical and biological properties related to non-communicable diseases using standard and new in vitro methodologies;
  • Assess the nutritional suitability of cultured meat/seafood ingredients to develop healthy foods;
  • Work on an interdisciplinary European project at INL in the Cellular Agriculture area.

 

Mandatory Qualifications

Education

  • PhD in Food Technology, Nutrition, Engineering or other related areas.

Experience

  • Formulation of functional foods and techno-functional and bioactivity assessment;
  • Nutritional assessment of food ingredients;
  • Food digestion and analysis of digested products;
  • Culture of cells and scaffolds.

Technical Skills

  • Analytical techniques (i.e., HPLC, fluorescence spectroscopy, ICP, LC-MS) and morphological characterisation (i.e., SEM, TEM, confocal);
  • Techno-functional properties assessment methods (i.e., printability, water activity, colour, texture, rheological properties and tribological properties);
  • Nutritional composition quantification methods;
  • Acellular and cellular in vitro assays for functional and biological properties assessment (i.e., cytotoxicity, oxidative stress, anti-diabetic and anti-obesity).

 

Other Skills

  • Knowledge in food product development will be valued;
  • Knowledge of the regulations EC 2015/2283 (Novel Foods) and EU 2017/2469 (Administrative and Scientific Requirements) will be valued;
  • Knowledge in Cellular Agriculture will be valued;
  • Knowledge in 3D Food Printing will be valued.
