Overview
The Food Processing and Nutrition RG is dedicated to developing nanotechnology-based solutions for big societal challenges to build the future food system, optimising materials and processes throughout the entire food value chain to ensure the integrity of food to consumers.
We are looking for a qualified Junior Research Fellow to join our team for the development of insect-based personalised meat analogues under the project Agenda InsectERA, with the reference nº C644917393-00000032, co-funded by Component C5 – Capitalisation and Business Innovation under the Portuguese Resilience and Recovery Plan, through the NextGenerationEU Fund.
Job Duties
The job duties will be the following:
- Manufacture and characterise meat analogues;
- Study different protein fractions;
- Work on an interdisciplinary national project at INL in the 3D Food Printing area.
Mandatory Qualifications
Education
- MSc in Food Technology, Nutrition, Engineering or other related areas
Experience
- Development and characterisation of meat alternatives by 3D printing and/or extrusion processing;
- Formulation of alternative proteins-based foods;
- Assessment of techno-functional properties;
- Food digestion and analysis of digested products.
Technical Skills
- Computer-assisted design (CAD), slicing and 3D food printing;
- Techno-functional properties assessment methods (i.e., printability, water activity, colour, texture, rheological properties and tribological properties);
- Morphological characterisation (i.e., SEM, TEM, confocal);
- Protein separation and characterisation (i.e., electrophoresis, ultracentrifugation, fluorescence spectroscopy, ICP);
- Gastrointestinal digestion and digestibility of food ingredients.
Other Skills
- Knowledge of food product development will be valued;
- Knowledge of insect proteins will be valued;
- Experience in projects with industry will be valued;
- Experience in oil structuration will be valued.
