The planned research activities will be mainly oriented towards the study of beverage production processes and the development of instrumental, physicochemical and sensory analytical techniques to implement quality control and stability of raw materials and finished products, and at the same time valorize the byproducts of the respective production chains. In particular, the following research topics will be considered: (i) technological process innovation in the production of quality beverages; (ii) development of new beverages and valorization of their respective by-products with a view to circular economy; (iii) studies on the shelf-life of beverages and their stability and refinement by evaluating quali-quantitative parameters; [...]
