Offer Description
The short durability of pasteurized milk is due to the
mild heating conditions used to preserve the nutritional value of milk. Because of this short shelf life,
pasteurized milk approaching the sell-by date can remain unsold on the store shelf. Expired milk
becomes a category 3 by-product of animal origin (EU Regulation 1069/2009) and, as such, cannot
re-enter the human food chain.
More specifically, the casein could represent a valued material for the technological properties other
than the nutritional content. On this basis, the casein from expired milk can be separated in different
conditions which affect its technological functionalities. This project is dedicated to the creation of a
concept of the upcycling protein coming from expired milk to create a biomaterial that can be 3D- printed into objects intended for food packaging application.
