The Department of Food Science and Agricultural Chemistry at McGill University is seeking applications to fill a Postdoctoral Researcher position under the supervision of Dr. Salwa Karboune:

Postdoctoral Researcher - Position in Biotransformation of a Biomass into Added Value Functional Ingredients

[1 year renewable for another year – maximum 2 years]

Position summary/responsibilities:

Proposed project title: T he development of innovative approaches for the biotransformation of food processing by-products into added-value functional ingredients.

The objective of this project is to develop innovative processes to generate highly added value functional ingredients from food-processing by-products. The targeted functional ingredients include carbohydrate-based polymers, phenolic acid-based antioxidants, glycoproteins and peptides. These natural ingredients can be either added directly to foods or incorporated into packaging systems.

In this context, the Postdoctoral Researcher will:

  • Conduct chemical analyses of the biomasses in terms of composition and structural properties
  • Develop and optimize enzymatic biotransformations to generate bioactive molecules
  • Characterize the chemical profiles and the structural properties of bioactive molecules by LC-MS, NMR and others
  • Assess various functional properties of bioactive molecules

The Functional Food Ingredients and Biocatalysis Laboratory combines enzyme technology, food chemistry and bioactivity to address multidisciplinary challenges related to the development of a biocatalytic platform based on a novel enzymatic activity. The Laboratory is part of the Faculty of Agricultural and Environmental Sciences, one of the eleven faculties of McGill University, and is at the forefront in applied bioscience, nutritional and environmental sciences research and teaching. The candidate will be provided with research space in this laboratory and the resources to perform his/her research. The Functional Food Ingredients and Biocatalysis Laboratory is equipped with all the necessary instruments for this project (including UHPLC-QTOF-MS/MS, HPSEC; HPAEC, Spectrophotometer, FPLC, etc.).

Education / Experience:

We are searching for an enthusiastic candidate with a strong interest in functional food ingredients. The ideal candidate for this position will have the following qualifications:

  • A PhD degree in a related field (food chemistry, food science, food biocatalysis, etc.)
  • Strong proven background (published work in peer-reviewed journals) in food chemistry, food science, and food bioscience
  • Proficiency in different areas of food biotransformation, food analysis, chromatography, high-resolution mass spectrometry and data analysis
  • Good spoken and written communication skills in English

The initial position is for one year. Depending on the performance in the first year and the research interests of the candidate, the fellowship is renewable for another year (total maximum 2 years).

Annual Salary : $40,000.00 negotiable
