Project Outline:

This project will explore the impact of grain enzymes on malt quality and malting in an industrial and a micromalting setting. In this project, we will identify, characterise and quantify grain-derived enzymes over the course of malting. This project will potentially involve collaboration with Oregon State University .

Funding: No external funding, internal funding for research available. All consumables and instrumentation are available through the supervisor. The PhD candidate is expected to apply for a PhD fellowship.
