The Hospitality Chef, Waterfront Pantry supports the Manager, Corporate Catering and Head Chef in the operations of the Geelong Waterfront Pantry by contributing to all culinary activities, including menu development, estimating food consumption, food requisition and preparation, quality consistency, presentation techniques and quality standards.

Reporting to the Head Chef, Waterfront Pantry will:

  • Generate new ideas and share those ideas with others in the work area to improve process and practice
  • Assist Head Chef in sourcing quality suppliers.
  • Review client feedback to continuously develop and prepare creative and nutritious menus.
  • Maintain regular maintenance, cleaning, sanitation, safety and operation of all kitchen equipment. and associated areas.
  • Promote and provide a safe working environment for staff to ensure compliance with the requirements of all relevant Occupational Health and Safety, Occupational Hygiene, food handling and personal safety standards.
  • Contribute to the management of food preparation costs & waste to ensure continual improvement.
  • Assume responsibility for the effective running of the kitchen in the absence of the Head Chef including supervising the Hospitality Cook and Casuals to ensure effective outcomes
  • Be responsible for stock management, ordering supplies and budget control under the direction of the Head Chef
  • Deliver effective and efficient outcomes and outputs against team and operational work plans

To be successful, you’ll have:

  • Completion of a Certificate IV in Commercial Cookery or completion of a relevant Degree without subsequent relevant work experience; or
  • Completion of an Associate Diploma and at least two years subsequent relevant work experience; or
  • An equivalent combination of relevant experience and/or education/training
  • Experience in managing catering inventory and budgets
  • Experience in a similar position

Special Requirements:

  • Regular work outside business hours is required (e.g., the work pattern includes hours outside business hours)
  • This position is a flexible ordinary hours span position which offers additional loadings to salary as per clause 43.3 of Deakin’s Enterprise Agreement
  • Working with Children Check (refer to Recruitment Procedure)
  • Current Certificate in food handling
