The Chef Instructor Teaching Support Specialist (TSS) is responsible for both restaurant and lab course operations. As such, the TSS interacts daily with individual students in both large and small groups to teach the practical hands-on aspects of food and beverage operations. The TSS will guide students through the process of synthesizing skills, concepts, and theories learned in the classroom that are utilized daily to operate a full service restaurant or to successfully complete a culinary or beverage management lab section. This includes all elements of professional food handling and preparation as well as beverage service considerations for both the front and back of house. The TSS is expected to work with faculty in presenting and teaching goals and objectives of course curriculum. Knowledge of course material, good communication and platform skills are essential to be an effective teacher. The TSS is responsible for supervising all students while managing lab sections and/or operating a restaurant as part of an instructional team.

Meeting administrative goals pertaining to course expenses and logistics are required.

Required Qualifications:

A two year culinary degree and a four year hospitality degree with five years of food service experience, which includes a minimum of three years of supervisory food service experience. A high level of culinary knowledge and technical skill is strongly desired. Current awareness of culinary and restaurant trends is necessary.  Knowledge of current food service sanitation requirements and food safety standard operating procedures is required. Knowledge of food and beverage management systems and controls is expected. Excellent communication and interpersonal skills. Flexibility and adaptability with scheduling of hours including nights and weekends in support of course and operational responsibilities is required.

Preferred Qualifications:

As a member of the Nolan School of Hotel Administration’s Instructional Support Department, a Teaching Support Specialist is responsible for a range of instructional support for the school’s food and beverage management area course offerings. These responsibilities include operational, administrative and laboratory elements. Additional responsibilities require the TSS to be proficient with Microsoft Office and electronic purchasing systems for multiple products and services. Food safety and TIPS certification preferred.

Operational and Food Service Management Laboratory Support Responsibilities Include:

    Academic Lab/Course (40%):

    • Manage, supervise, and instruct students during lab operations.
    • Complete student lab performance evaluations.
    • Student Instruction-ensure and reinforce all culinary techniques, applied food science, food safety and food quality attributes presented during lecture.
    • Ensure students’ safety by managing the environment in which they work.
    • Teach and maintain correct and safe food handling procedures as outlined by the NYS Health Code during lab operations.
    • Manage lab set-up and break down as well as all closing procedures.
    • Responsible for distribution of alcoholic beverages for student tasting to ensure compliance with state and federal laws, SHA, and university policies.
    • Meet and assist students with preparation for exams or assignments.
    • Provide student office hours.
    • Manage the ordering, receiving, storeroom, and issuing process.
    • Responsible for the security of food and beverage products and equipment.
    • Act as an educational facilitator for beverage tastings for both scheduled classes and special events.
    • Teach and support the use of lab operations documentation (e.g., inventory opening and closing checklists, station set-up diagrams, etc.)

    Course Logistics and Prep (30%):

    • Provide assistance in developing teaching/demo materials.
    • Participate in lab/course manual updates.
    • Assist with both course and student recipe selection, testing and menu development activities.
    • Assist with in-lab product identification exam set-up, proctoring and breakdown.
    • Supervise the teaching assistants during class/lab and approve lab hours if necessary.
    • Responsible for student attendance record generation, student evaluation, policy violation documentation and grading if necessary.
    • When necessary assist with special needs for SDS students.

    Product Management (10%):

    • Complete ordering of food, beverages, and paper supplies for the School of Hotel Administration in compliance with all school and university policies.
    • Manage the receiving, storing, issuing, and accounting of the school food and beverage inventory to reduce costs and liability.
    • Maintain established inventory pars and product rotation.
    • Maintain purchase & invoice log for all courses.

      Facility Management (10%):

      • Supervise the daily opening and closing duties regarding the lab facility.
      • Assist and participate in lab closing procedures at the change of semesters and the end of the academic year
      • Responsible for maintaining all storerooms and coolers according to SHA policy and Tompkins County Health Code requirements
      • Responsible for reporting any equipment malfunction to the maintenance department and your supervisor
      • Maintain pars for all paper goods and cleaning supplies

      Staff Management (5%):

      • Assist with hiring, training, and scheduling all TA support.
      • Monitor TA’s in completing all assigned tasks during class/lab/section. This includes but is not limited to the following: the purchasing process, inventory control, production, service, HACCP requirements, food and beverage product distribution, facility maintenance/cleanliness, dissemination of course information, student evaluation and grading.
      • Provide direction to non-exempt staff as needed.
      • Communicate and maintain a professional working relationship with all supporting departments.
      • Report any confrontation with students, staff, or faculty to your supervisor ASAP.
      • Manage and report student injuries to supervisor. Complete all necessary documentation related to the accident as required by SHA or the university.

      Misc. Other Duties (5%):

      • Provide support to students using the Adaco Purchase System
      • Support HEC throughout the year as an in-house advisor (Homecoming, Function Flow, Special Events, and HEC Weekend)
      • Act as Educational Facilitator for special lab events and assist with the planning, organization, execution, and breakdown of these events
      • Attend department, area, and course meetings when requested

      This is a 10 month position (August through May).
