Position Focus:

The Manager of Menu Design and Systems is responsible for the overall menu and ingredient integrity within the menu management system for Yale Hospitality (YH). This position leads and administers all facets of the menu management system including ingredient database accuracy, menu cost information, and compliance for standard protocols and procedures across YH. This role will plan, support, and oversee the ongoing training and development of initiatives focused on the menu management system. This position will work collaboratively with the Business Intelligence and Optimization Manager toward continuous improvement and compliance of technology solutions both in administration and operations. In addition, this position will supervise those clerical roles within the department that report directly to the Health and Wellness, Menu Design and Food Choice Architecture Manager.


Essential Duties

Menu Management Analysis and Compliance   • Leads the culinary menu management system and supports the Director of Culinary Excellence and the team in fulfilling Yale Hospitality’s goals.   • Supplies technical leadership and ownership of the enterprise menu management system used throughout Yale Hospitality. This will include the database of menus, recipes, ingredients, and stock cards.   • Organizes all food ingredients based on their nutritional contribution, allergens, and cost. In collaboration with the culinary team, and in support of the Director of Culinary Excellence, manages and maintains a culturally inspired recipe database mapped to the ingredients, and a choice architecture menu database.   • Uses departmental principles of health and wellness to collaborate with nutritionists and registered dietitians to adhere to principles of health and wellness.   • Supervises menu management personnel to ensure exact and prompt posting of system information and processes.  • Partners with Business Intelligence and Optimization Manager to guarantee optimal system functionality, upgrades, and enhancements.  • Collaborates with Director of Supply Chain and Sustainability and purveyors on cycle menus and weekly forecasting.  • Supplies up to the minute information to the Health and Wellness Manager and Departmental RD’s to notify of product changes in relation to allergen and dietary awareness.  • Uses best judgment in ingredient selection based on seasonality, sustainability, health and wellness, and cost. Seeks feedback and continuously improve various processes.   • Collaborates with the culinary team at the appropriate level to gather information, quality assurance of the information in the system, and continuous monitoring for improvement.   • Oversees menu management personnel to ensure the exact and prompt posting of system information and processes.   • Supports the department's day-to-day continuity, collaborating and communicating with vendors, managers, and culinary staff to ensure the successful operation of departmental activities.   • Assists with marketing and communications related to special events about menu innovation.      Learning and Development    • Provides subject matter expertise and technical and operational training for staff. Ensures quality assurance and compliance for the menu management system.   • Engages in opportunities with industry partners at the local, regional, and national level. Attends culinary shows, training labs, and events to support the growth and continuous evolution of the department’s core values.  • Represents the Yale Hospitality team to students, faculty, staff, and guests in a positive and professional manner.  Other    • Oversees student managers and interns to support departmental needs in relation to menu management and analysis, health and wellness and allergen compliance.  • Performs other duties as assigned.


Required Education and Experience

Bachelor's Degree in Culinary Arts or related field and five years of experience in a similar role, with increasing responsibility in culinary management or an equivalent combination of education and experience.


Required Skill/Ability 1:

Demonstrated ability in training development in a large, complex food and beverage organization. 


Required Skill/Ability 2:

Certified in SERVsafe and AllerTrain or ability to obtain certification within 6 months.


Required Skill/Ability 3:

Demonstrated ability with quality control and recipe development.


Required Skill/Ability 4:

Proficient with Microsoft Office Suite.


Required Skill/Ability 5:

Demonstrated ability with menu management systems.


Preferred Education, Experience and Skills:

Proven advanced knowledge of international cuisine, nutritional cooking techniques, and vegetarian/vegan principles.  Certified Nutrition Specialist preferred. Multi-unit experience preferred. Prior use of Menu Management System Preferred.


Required Licenses or Certifications

Currently certified in food safety and sanitation as mandated by the State of Connecticut.


Physical Requirements

Sustained standing; frequent bending. Move, lift, and carry supplies, equipment, and materials weighing up to twenty-five pounds without aid from floor to waist height and twenty pounds to shoulder height. Carry supplies up or down stairs if necessary.
