Job Summary

This position is responsible for menu planning, development, and implementation of menus for patient and retail food services at the Parnassus campus.  The Executive Chef is responsible for the oversight of the Culinary production kitchen including menu maintenance in the Computrition Hospitality Suite, food preparation and production, food concept, and recipe development.  This position will work closely with the Associate Director, of Operations and Culinary Innovation and Assistant Director, NFS as well as retail supervisors and food service coordinator to continually enhance and improve services for customers and patients.

Department Description

Nutrition and Food Services has two major divisions, Clinical Nutrition and Food Services. The Department is responsible for providing nutrition and food services to patients in the hospitals and clinics at Parnassus, Mount Zion, and Mission Bay sites. We are responsible for operating a retail cafeteria and providing a full range of catering services to the Medical Center and campus community


Required Qualifications

  • This position requires flexibility to orient and work at all UCSF Medical Center locations.
  • At least 7 years of progressive restaurant or food service management experience, including at least 2 years in a leadership position, with experience supervising people and solving problems in food service.
  • Working knowledge of The Joint Commission, California Title 22, and other relevant regulatory guidelines.  
  • Experience in large hospitals (greater than 500 beds).
  • Strong written and verbal communication skills to effectively work with clients, customers, and support staff.  
  • Computer skills including the ability to use Microsoft Office applications such as Word, Excel, Outlook, PowerPoint, or equivalent.  
  • Experience with Computrition, CBORD, or other comparable food and nutrition computer programs.

Preferred Qualifications

  • Associate or bachelor’s degree in culinary arts, food service management, or related field from a regionally accredited university.
  • Ten or more years of work experience including experience in large teaching hospitals. 
  • Experience teaching dietetic and culinary interns.
  • Current Certified Executive Chef (CEC) credential from the American Culinary Federation. 

License/Certification

  • ServSafe® Food Protection Manager Certification or equivalent food protection manager certification recognized by the state of California.
