Yale Hospitality is currently recruiting for a Baker to fully utilize skills and knowledge with bakery equipment and ingredients.

Essential Duties

Produces bakery menu items, catering items, and special events/requests.
1.  Baking Fundamentals: Production knowledge of yeast products, quick breads, cookies, and cake batters. Selects appropriate ingredients and equipment for baked products. Operates all bakeshop equipment and tools, including, but not limited to, rotary ovens, mixers, sheeters, cutters, extruders, tempering machines and ranges. Is capable of calculating baker’s percentages and conversion factors. Understands operation procedures for standard tools and bakeshop equipment.
2.  Pastry Fundamentals: Production knowledge of laminated doughs, pie and tart doughs, creams, custards, and sauces. Knowledge of ingredients and procedures to prepare selected creams, custards, and sauces, American traditional cakes, and buttercreams, icings, and glazes. Produces, assembles, and decorates cakes.
3.  Job Knowledge:
a.  Understands and is capable of executing all phases of daily work including production, cleaning and shipping.
b.  Supports and guides the baking team in quality control in accordance with departmental standards, follows recipes in accordance with production software.
c.  Supports the head baker to create theme, regional, seasonal, and/or sustainable menus to reflect current industry standards.
d.  Determines and works with alternative, seasonal, and sustainable ingredients to accommodate health and wellness and special diets and acceptability of products/allergens.
e.  Participates in product innovation, recipe testing, and production efficiency.
f.  Evaluates and recommends appropriate changes in material or procedures to improve quality, productivity or to reduce costs.
g.  Has awareness of new baking technologies.
h.  Contributes to a positive work environment through role modeling, motivating, and supporting the baking team.
4.  Safety and Sanitation: Executes established safety and sanitation plan to prevent contamination in baking production and distribution. Monitors food temperatures in food storage areas to ensure food safety. Cleans and sanitizes all relevant tools, equipment and work stations related to baking production.
5.  Supports food cost control through adherence to established recipes. Provides head baker with food and supplies needs list.
6. Record daily production, tracking waste, left overs and daily challenges.
7. Performs related duties as required or assigned within job classification.


Required Education and Experience

High school diploma or equivalent. Three or more years as a commercial baker of which two years are within Yale Bakeshop, or 5 years’ experience as a commercial baker with production and managerial supervisory experience, with two years or more experience in a high volume environment.


Required Skill/Ability 1:

Proven ability understanding baking fundamentals with ability to accurately read recipes and calculate baker's percentages and conversion factors.


Required Skill/Ability 2:

Demonstrated ability with pastry fundamentals including production knowledge and ability to laminate doughs, pies, and tart doughs, creams, custards, and sauces.


Required Skill/Ability 3:

Experience working in a high volume production bakery with an understanding of operating procedures with bakery equipment as well as safety and sanitation plans.


Required Skill/Ability 4:

Proven ability to produce, assemble, and decorate cakes.


Required Skill/Ability 5:

Ability to read, write, follow written instructions, and to handle mathematics pertinent to the job.


Required Licenses or Certifications

Serve Safe Certification or comparable food safety training Certification accepted by the State of Connecticut Health Department.
