Food and Beverage Manager

About the Role

To assist the Centre Manager and the Executive Chef in the development and operation of the Food and Beverage department, in accordance with agreed standards and current legislation. Responsible for the leadership and training of the Food and Beverage team to ensure first class customer service is consistently delivered.

Hours of work: 37.5 hours per week, on a 10 in 14 rota, to include early shifts, late shifts and occasional weekends.
Salary: £28,500-£32,000 per annum


Key responsibilities

Working within the Food and Beverage team, you will carry out a wide variety of activities, with your key responsibilities to include:

  • Ensure standards of food hygiene, health and safety are monitored, maintained and reviewed in accordance with legislation and company objectives.
  • To manage the operation under your control to achieve agreed customer satisfaction targets in all areas in line with company objectives. To ensure that appropriate and timely action is taken to review operational standards as a result of client feedback.
  • To plan and manage the service of food and beverages ensuring the department operates at maximum efficiency, within budgetary, to deliver the required level of service.
  • To be involved in the day to day running of the department and to include yourself as a working member, when required.
  • To work as a member of the head of department team attending all meetings and training as required, implementing decisions as appropriate.
  • To plan and lead monthly departmental meetings ensuring a smooth flow of communication throughout the Institute.
  • To be responsible for the management of the beer, wine and liquor orders, including the delivery and stock control of these items, using the correct procedures and administration, to maximise profits and maintain liquor license compliance.
  • Ensure all departmental equipment is well maintained, safe to use and in good condition.
  • To actively promote and maximise the sales of food and beverages throughout the Institute.
  • To manage the time and attendance system on a weekly/monthly basis to promote work-life balance / wellbeing and support the timely and efficient delivery of payroll, following the agreed procedures and attend fortnightly payroll meeting.
  • To complete rosters in a consistent, cost effective and timely manner, focusing on service delivery and planning ahead for all eventualities, maintaining fairness and communicating changes clearly to the team.
  • To ensure that you follow all of the policies and procedures in relation to our environmental, general data protection and anti-bribery and corruption policies, details and objectives of which are included in the staff handbook.
  • To carry out any reasonable request made by members of senior management team in a timely and cost effective manner.

You will be a dedicated and confident food and beverage professional, with a proven track record, looking to progress within a unique environment whilst also leading and developing a team to deliver a first class customer service experience.


Essential skills and experience
  • Sound Microsoft Office skills
  • Previous customer service experience in a hotel or college environment
  • Advanced interpersonal and communication skills
  • Excellent organisational and time management skills
  • Attention to detail
  • (Minimum) Level 3 Food Safety qualification (or equivalent)

Desirable skills and experience
  • A first aid qualification
  • Personal licence holder (APLH)
