About This Opportunity  

We are seeking a passionate and enthusiastic Junior Sous Chef to lead our restaurant team. The Junior Sous Chef will supervise the kitchen team and production of restaurant and function food as directed by the Executive Chef while maintaining the high culinary standards of Patina at Customs House.

Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. the restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.

Staff are required to fulfil 38 hours per week across a seven day roster including weekends and evenings.

Duties and responsibilities include, but are not limited to:

  • Production of all foods within Customs House maintaining high standards.

  • Involvement in menu planning and implementation, and adherence to recipes.

  • Leadership and team development – supervision, training and motivation of junior staff.

  • Cost control – kitchen stock, produce ordering.

  • Following all requirements in maintaining the Food Safety Plan.

  • Maintenance of the store and fridges in a clean and tidy manner.

  • Receiving of goods, recording temperatures, stock storage and stock rotation.

  • Maintenance of mis en place for restaurant and functions.

  • Reporting of maintenance issues or equipment problems to senior chef.

  • Assisting the Executive Chef with the day to day activities of Customs House as required.

  • Any other duties as reasonably directed by your supervisor.

This is a Full-time (100% FTE), Fixed-term position for up to 3 years.  At Catering Level 5, The full-time equivalent base salary will be in the range $77,396 - $86,029 plus super of 17%. The total FTE package will be in the range $90,553 - $100,654 per annum. 


About You

We are seeking a chef that values great produce from South East Queensland and can develop an exciting menu that pays homage to the land, people and produce. You will have very high standards and excellent leadership skills, with a minimum of 3 years experience in the role of Sous Chef or Demi chef in a similar establishment.

  • Completion of apprenticeship in cookery and a minimum of 3 years’ experience in the role of Junior Sous Chef/Demi chef in a similar establishment.

  • Demonstrated passion for food in all its variety.

  • Abreast of the latest trends in the culinary arts and comprehensive understanding of nutrition.

  • A background which encompasses restaurant and banquet service

  • A commitment to excellence of product and service with a customer driven focus.

  • Well-developed communication and negotiation skills.

  • Well-developed leadership skills.

  • Creative event and menu design and development skills.

  • Financial, cost and stock planning and control skills.

  • Genuine interest in and knowledge of food, its preparation and its trends.

  • Food Safety Supervisor qualifications as required under the Food Act 2006.
