About This Opportunity  

This is an excellent Opportunity for an enthusiastic Demi Chef to join the professional team at the award winning Customs House, in the heart of Brisbane City. As Demi Chef, you will primarily be responsible for the production of restaurant, function and outside catering for our busy kitchen, while maintaining the high culinary standards of Customs House.

Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. The restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.

The successful candidate will take a hands-on approach to the general operations of the kitchen, including the supervision and training of junior staff, involvement in menu planning and execution of outside catering events.

Staff are required to fulfil 38 hours per week across a seven day roster including weekends and evenings.

Duties and responsibilities include, but are not limited to:

  • Maintain a high standard of food production within Patina at Customs House and outside catering.

  • Maintain a hygienic and tidy work area, storage facilities, refrigerators and the responsible use of all kitchen equipment.

  • Execute catering events, including involvement in menu planning and implementation.

  • Maintenance of mis en place for restaurant and events.

  • Adherence to recipes and general kitchen duties.

  • Supervise, train and motivate junior staff.

  • Assist the Executive Chef with the day to day activities of Customs House as required.

  • Following all requirements in maintaining the Food Safety Plan.

  • Ordering and receiving of goods, stock, produce, equipment, recording temperatures, stock storage and stock rotation

This is a Full-time (100% FTE), Fixed-term position for up to 2 years.  At Cook Grade 4 Load Rate, the full-time equivalent base salary will be $68,499.64 plus superannuation of up to 17%. The total FTE package will be $80,144.58 per annum.  


About You

  • Completion of apprenticeship in cookery.

  • Current BCC Food Safety Supervisor Certificate.

  • Strong knowledge of the production of a la carte and banquet foods.

  • Good knowledge of all kitchen procedures and operations.

  • Excellent organisational and leadership skills.

  • Well-developed communication and interpersonal skills.

  • Knowledge of HACCP and BCC procedures in regard to food, health and safety procedures.

  • Minimum of 3 years’ experience in the role of sous chef/demi chef in a similar establishment as well as experience in staff supervision and training.

  • A positive attitude and customer driven focus.

  • High standard of personal cleanliness.

  • A commitment to excellence of product and service.

  • Valid Driving License.
